Garlic scapes are plentiful at the farmers market this time of year. These stalks from a garlic plant are flavorful and have several culinary uses.
Just a few years ago, garlic scapes weren’t very easy to get your hands on unless you got them from your own garden. Farmers would discard the stalks from garlic. As they’ve grown in popularity, farmers realized they should be selling them, not trashing them, and now they’re plentiful at farmers markets and show up in CSA boxes this time of year.
