My next door neighbor, in a very urban backyard, maintained a chicken coop for years. They had fresh eggs year round. Kept one or two chickens continuously -- with a breeding cycle to replace the occasional one that ended up on the dinner table. A rooster was allowed to roam free -- and he patrolled and ate from the yard, but never strayed far from the ladies.

They used a long funnel shaped execution stand, where the chicken would be quickly placed in upside down, would obligingly poke its head out of the bottom. And with a knife they would almost immediately cut its head off, with the blood collected to fertilize their garden.
